A few weeks ago our friend Octavia from Octavia's Kitchen posted this on her Instagram page and we have been thinking about it ever since. It is a dessert perfect for a summer evening, perfectly light, zingy and sweet. We spoke to her and she immediately agreed for us to share the recipe with you. What we like about it most is that it's extremely easy to make! This recipe will make 2 mini tartlets.
- 1 lemon, juice and zest
- 55g caster sugar
- 1 egg
- 30g double cream
- Pastry cases - you can make your own, or for ease buy ready made shortcrust pastry!
Whisk the egg, then add the rest of the ingredients and whisk again until smooth.
Pour into the tart case (use shortcrust pastry) and bake at 150 degrees in a fan oven until set with a slight wobble.
Perfect served on its own, or with a few raspberries on the side for a little extra zing!
